Churned this morning, gone by Sunday.

Mabel & Fig makes ice cream in twelve-litre batches on Congress Street. Sixteen flavors in the case at a time, and they change with whatever Maine is growing.

Two hands raising waffle cones, one topped with pistachio, the other with strawberry sorbet.

How a batch happens

Small batch isn't a slogan here. It's the size of the machine.

A server presses a scoop of pale ice cream onto a sugar cone across the counter, a customer waiting behind.
Tuesday, 12:04. The first cone from Monday's churn.
  1. 6:00 am

    Milk arrives

Swallowtail Farm in Whitefield drives down sixty litres of grass-fed milk and cream, three mornings a week.

  2. 7:30 am

    Twelve litres at a time

Every base is cooked, aged overnight, then churned in one twelve-litre machine. A batch makes about forty scoops.

  3. Whenever it runs out

    Gone is gone

When a flavor sells out, its name goes on the board by the door that says "see you next year".

Trays in the case: vanilla, strawberry studded with halved berries, and lemon.

Eight stools and a bench outside

The counter seats eight. The bench by the door seats everyone else, and on a warm Saturday it seats half of Congress Street.
